Tip: The pumpkin curry goes very well with rice or fresh baguette, or you can simply enjoy it on its own. A few crushed peanuts or cashews can be sprinkled on top as an extra garnish.
3 tips and refinements for delicious pumpkin curry

1st tip - even more content: If you want something even more substantial, you can add more vegetables to the pumpkin curry. Simply add them to the curry in the fourth step and leave to cook. Cherry peas, lentils, diced potato or sweet potato, chunks of broccoli or cauliflower are all great options.
Note: Depending on the variety, cherry peas and lentils may need to soak for several hours before they can be added to the dish. The soaking water should not be used, but poured away.
2nd tip - adding meat: Of course, you can also add some meat to this pumpkin curry recipe, chicken breast fillet in particular goes very well with it. Ideally, the chopped chicken should be fried well first, then removed from the pan and set aside. Finally, add it to the simmering curry for another ten minutes or so.
3rd tip - Does it have to be coconut milk? No, because coconut milk is not to everyone's taste. As an alternative, you can use cream, cream cheese or Greek yogurt, for example. If the pumpkin curry is too thick, it can be thinned with a little vegetable stock.
